Vegan Raspberry Ice Cream
Ingredients
400g Fresh or Frozen Raspberries (Organic is best)
175g Organic Raw Sugar, Honey, Organic Brown Rice Syrup
1 cup Vegan Cream (¾ cup plant-based milk + ¼ cup cold pressed extra virgin oil or butter)
Note – Raspberries: If you cannot get organic fruit soak your fruit in apple cider vinegar and water for 10-15 mins drain and rinse to help clean off chemicals.
Method
- Measure out plant-based milk (I used Bon Soy organic fermented soy milk and Australian olive oil) into a jug or medium bowl and place in the refrigerator
- Take a stick blender and blend to a puree
- Add sugar, honey or brown rice syrup to fruit puree and blend well
- Take out milk and oil and beat till it makes a frothy cream
- Add cream to fruit and blend well together and then add to ice cream maker
- Place in a container in the freezer and then enjoy!
Notes:
Variant instead of cream you can make a fruit yoghurt ice cream;
I use a fermenter yoghurt maker to make a vegan soy yoghurt to replace the cream to make a yoghurt ice cream
