Soba Noodle Salad

Ingredients

150 gr soba noodles

1 bok choy thinly sliced

1 thinly Julienne sliced carrot

½ thinly julienne sliced beet

1 spring onion thinly diced

 

Sesame dressing

Ingredients

1/3 cup Tamari soy sauce

2 tbsp lemon juice / white vinegar

3 tbsp sesame oil

1 tsp maple syrup

1 tsp smooth peanut butter / sunflower butter (for nut free version)

Pepper and chilli flakes to taste

Method

  1. Cook soba noodles as per directions, rinse and cool.
  2. Mix noodles and vegetables.
  3. Whisk dressing ingredients until smooth and lump-free.
  4. Pour dressing over the salad, toss until well coated and enjoy.
