Enjoy this fresh and healthy shredded chicken salad.
1 x chicken breast
1 x knob of ginger – sliced
1 teaspoon sea salt
1 x carrots – shredded
2 x celery sticks – sliced
1 x cucumber – shredded
1 x fresh beetroot – shredded
1 x apple – cored and sliced
1 x spring onion – sliced
1/2 punnet fresh blueberries
1/4 cup pumpkin seeds
2 cloves garlic
1/4 cup tahini
1 freshly squeezed orange juice
1 tablespoon apple cider vinegar
1/4 cup olive oil
Poach chicken, place chicken and ginger slices in the bottle of a large saucepan, sprinkle with salt and cover with excess water. Bring to the boil. Reduce heat and simmer over low heat for about 15 minutes. Check chicken is cooked. When opaque in the middle transfer to cutting board to shred.
While the chicken is cooking you can prepare your salad. Start with celery, carrot, cucumber, spring onion, beetroot, apple
Make dressing, add to food processor, garlic, tahini, orange, vinegar and oil and blend.
Combine salad, chicken, pour dressing and top with blueberries and pumpkin seeds.
