Pistachio Cacao Bliss Balls

Pistachio nuts are slightly sweet in taste and are packed full of phenolic antioxidants as well as being high in vitamins E and the B complex vitamins. Combined with the goodness of cacao, cashews, tahini and oats means these treats are super healthy and although they are high in energy they are very rich so one ball is usually all you need to satisfy those afternoon sweet cravings.

Ingredients

150g medjool dates ( around 8 pitted )
100g oats
150g cashew nuts
30g shelled pistachio nuts
40g shredded coconut
25g cacao powder
45g tahini
1tsp linseeds
30g water
To make these gluten free just exchange the oats for extra cashews!

Method

  1. Place oats into a food processor and process for 5 seconds
  2. Add the dates, cashews, pistachio nuts, coconut, cacao, tahini, linseeds and water and process until the mixture is like dough
  3. Roll into balls and coat in crushed pistachio nuts if desired
  4. Store in the freezer.
