Microbiome Friendly Nicoise Salad

Ingredients

12 small chat potatoes, quartered

400g baby green beans, trimmed and halved

425g of tuna in olive oil, drained, flaked

400g four bean mix or young jackfruit pul

250g grape tomatoes halved

3/4 cup black olives

2 baby cos lettuce hearts, leaves separated and washed

4 hard boiled eggs, peeled and quartered

3 anchovy fillets (optional), drained and halved

1 quantity nicoise dressing

 

DRESSING

1/3 cup olive oil

1/3 cup red wine vinegar

1 tablespoon dijon mustard

 

 

Method

Make the dressing by whisking the oil, vinegar and mustard in a jug. Season with salt and pepper.

Cook potatoes in a large saucepan of boiling water for 10 minutes until just tender. Set aside in a large bowl.

Add beans to saucepan and cook for 2-3 minutes or until bright green. Drain and refresh with pouring cold water over them in a strainer.

Add tuna / beans / jackfruit, tomatoes, olives, lettuce, egg and anchovies (if using) to potatoes. Add dressing and toss gently to combine. Season with salt and pepper.

*Can also add asparagus as an alternative to beans.

experience.

Graduated in 1995 on the Gold Coast, Nicky worked in lead facilitation

Aruba Ocean Club in the Caribbean, Nicky was then selected to lead
the development of global hotel chain, Hyatt International’s Spa
Standards. Nicky led on the opening teams of a number of Hyatt
flagship hotel openings in Japan and Brazil before returning to the
Gold Coast.

Currently Nicky runs a busy private boutique clinic from her Tweed
Heads home, and is a sought after speaker in a number of community
and corporate locations in Australia.

Nicky also offers Telehealth appointments to her international patients
and remote Australian clientele, and mentoring to Naturopathic
practitioners who are seeking solutions to providing five star service and
systems to their own patients.
