Mediterranean Lamb

This delicious Mediterranean Lamb recipe will warm you up heading into winter.

Serves 2

Ingredients

4 lamb steaks
1 tablespoon olive oil
Oregano -3 tablespoons fresh
1 fresh lemon
2 garlic cloves – crushed
400g pumpkin – cut into chunks
1 red onion
1 red capscium – deseeded and sliced
¼ cup pine nuts
1 cup rocket
Sea salt to taste
Black pepper to taste

Method

Preheat oven to 200C
Combine oil, oregano, lemon juice and garlic in a large baking dish. Add lamb and vegetables, turning to coat, season with salt and pepper to taste. Remove lamb and refrigerate for 25 minutes.
Cook vegetables in the oven for 25 minutes. Add chops to vegetables and cook for a further 20 minutes, turning halfway. Remove from oven.
Mix in rocket leaves and top with pine nuts.
