Lamington Chia Pudding

3 Tbsp chia seeds

1 C milk of your choice

1 tsp maple syrup

1 Tbsp cacao powder

100g strawberries or raspberries

1 Tbsp desiccated coconut


  1. Pour first 4 ingredients into a jar with a tight lid. Close and shake until mixed. Wait 5 mins and shake again. Place in the fridge for at least 3 hours to set.
  2. Remove jar from fridge. You can either top it in the jar with fresh strawberries and coconut or, layer your pudding with strawberries and coconut in a large glass. Enjoy!
