Healthy Sweet Potato Noodle Beef Stir Fry

A quick easy week-night dinner that is full of flavour, gluten free/diary free, healthy and jam packed with vegetables!

Cook Time 25 mins

Ingredients

2x packets of organic sweet potato noodles or equivalent noodles of choice

Niulife Organic Teriyaki sauce

500gm Grass Fed beef stir-fry

Small onion

2 cloves garlic

5cm piece of ginger

3 cups of chopped/sliced vegetables of choice – I used carrots, broccoli and snow peas

Wok

 

Method

  1. Finely slice onion, garlic and ginger and sauté them in your wok in a small amount of olive oil until translucent and soft.
  2. Chop the vegetables and add them to the onions with 2 tablespoon of Niulife Organic Teriyaki sauce and sauté until they are slightly soft.
  3. Remove the onion and vegetable mix and place them in a bowl.
  4. In your wok without cleaning, add in the beef stir-fry strips with 4 tablespoons of Niulife Organic Teriyaki sauce and cook until beef is browned.
  5. Meanwhile cook your noodles as per packet instructions
  6. Add the vegetables back into the beef and stir for a further few minutes.
  7. Drain the noodles and add them to the beef and vegetable. Using tongs mix them all together to coat the noodles.
  8. Serve and enjoy!
