Congee
Ingredients
Bone Broth:
1 whole organic chicken
10 x cloves garlic – crushed
1 x knob fresh turmeric, chopped
3 x sticks celery – roughly chopped
3 teaspoons sea salt
1 x onion, quartered
Filtered water – enough to fill the slow cooker and submerge all the other ingredients
Congee:
180 gm brown rice
1.3 litres bone broth
700ml filtered water
3 x spring onions, sliced
1 x small knob fresh ginger, grated
1 x small knob fresh turmeric, grated
1 x medium head broccoli
Dash sesame oil
Method
Day 1:
Get started on the bone broth.
In a large slow cooker, place all the bone broth ingredients (put the water in last). Turn on high for 3 hours before reducing the heat to low for another 3 hours.
Carefully take out the chicken (it will fall apart) and put into a large bowl. Remove the meat and set aside. Put the bones back in the slow cooker and cook on low for another 18 hours.
If you’re super clever, you’ll arrange this part of the process so the broth will be cooking for at least 23 hours before starting the congee!
Day 2:
Pop the dry rice in a large saucepan over medium heat and stir to keep the rice moving for a few minutes until fragrant.
Pour the broth and the water over the rice and bring to a boil. Turn the heat down low, pop a lid on and gently simmer for one hour. Just before you are ready to serve, get your serving bowls out and in each bowl add shredded chicken (from the bone broth you started yesterday), spring onions, ginger, turmeric, and broccoli. Add the cooked rice (the congee) on top and a few drops of sesame oil. Add fresh herbs or other vegetables if desired.
