Chickpea and Peanut Brownies

Chickpeas are known for being protein packed and also for their ability to boost digestion, increase satiety and to stabilise blood sugar levels. For chocolate brownies use a pure cacao and hazelnut spread instead of the peanut butter. This mixture can be rolled into balls to make raw cookie dough balls because they taste so good!

Ingredients

1 400g tin organic chickpeas, drained
150 g organic pure peanut butter
80 g organic pure maple syrup
1 tsp vanilla paste
1 tsp baking powder
pinch of sea salt
60 g dairy and sugar free dark choc chips ( or cacao nibs ) Optional

Method

  1. Pre heat oven to 180.c
  2. Place chickpeas into a food processor or thermomix and process then add remaining ingredients (except the choc chips) and mix until smooth and sticky.
  3. Spoon mixture into a small, lined baking tin and bake for around 15 to 20 minutes.
  4. Allow to completely cool before slicing.
