Sweet Squash Soup for Glowing Skin
Ingredients
- 1⁄2 onion,
- 400g of sweet squash like a Butternut or Hokkaido or Crown Prince
- 3 inch or 6 cm piece of kombu dried seaweed
- White miso (or use sea salt),
- Sesame or another unrefined oil
- Sea salt
- Parsley or spring onion for garnish.
Method
- Slice the onion finely and fry in 1-2 tsp oil in a large pan, with a small pinch of salt, until the onion has become transparent, to develop its sweetness.
- Peel the squash and cut into 1⁄2 inch or 1cm cubes, add to the pan along with 500ml water and the kelp. Simmer for 40 minutes or until the pieces of squash are really soft.
- Remove the kombu (which has now added minerals and extra flavour to the soup).
- Either blend or mash the squash to create a smooth consistency.
- Dissolve 1 tbsp white miso in a little soup liquid, then add to the pan, and cook for another few minutes. (If you cannot find white miso, use 2-3 pinches of sea salt instead.)
- Taste the soup, and add a little more white miso or salt if the taste is too weak.
- Serve garnished with finely chopped parsley or spring onions.
