Mediterranean Zucchini Slice
Gluten Free, Dairy Free (if desired)
Ingredients
2 tablespoons of extra virgin olive oil
1 chopped and finely diced brown onion
2 crushed and peeled garlic cloves
150 grams of grated zucchini – excess water pressed out
8 organic eggs
1/4 cup of milk of your choice
1/4 cup of dill finely chopped
1 tablespoon of caraway seeds
1 cup of almond meal
Salt and pepper
Method
- Preheat oven to 180C
- Gently heat on medium two tablespoons of EVOO and combine onion and garlic and lightly sauté in a heavy bottomed pan until transparent
- Line a baking tray with greaseproof paper
- Slide the cooked ingredients into the tray and even out to cover the base
- Combine chopped dill, caraway seeds and almond meal with grated zucchini and spoon on top of the cooked onion and garlic
- Scramble eggs with the milk and add a little salt and pepper
- Pour over the zucchini combination and ensure the egg mixture soaks into all corners of the vegetables in the tray
- Bake on 180C for 30 minutes or until the mixture bounces back as cooked through
