Mediterranean Zucchini Slice

2 tablespoons of extra virgin olive oil

1 chopped and finely diced brown onion

2 crushed and peeled garlic cloves

150 grams of grated zucchini – excess water pressed out

8 organic eggs

1/4 cup of milk of your choice

1/4 cup of dill finely chopped

1 tablespoon of caraway seeds

1 cup of almond meal

Salt and pepper


  1. Preheat oven to 180C
  2. Gently heat on medium two tablespoons of EVOO and combine onion and garlic and lightly sauté in a heavy bottomed pan until transparent
  3. Line a baking tray with greaseproof paper
  4. Slide the cooked ingredients into the tray and even out to cover the base
  5. Combine chopped dill, caraway seeds and almond meal with grated zucchini and spoon on top of the cooked onion and garlic
  6. Scramble eggs with the milk and add a little salt and pepper
  7. Pour over the zucchini combination and ensure the egg mixture soaks into all corners of the vegetables in the tray
  8. Bake on 180C for 30 minutes or until the mixture bounces back as cooked through

She has been in continuous naturopathic practice for over 25 years (Bioceuticals Practitioner of the year 2015 – 2017 highly commended, 2019 ATMS practitioner highly commended) and is currently a is a naturopath at the Bourke Street Clinic Surry Hills an integrative practice in Sydney. She is also a FILEX 2016 presenter, member of the Health and Wellness panel for the Memorial Winston Churchill Trust, Ambassador and fellow of ATMS and holds a Nutritional Advisory position with Bowel Cancer Australia.
