Low-Fibre Nutritious Pasta Salad
Gentle on the gut great for digestion & microbiome health
This recipe is designed for individuals who need to follow a low-fibre diet while still ensuring balanced nutrition. It incorporates resistant starch for gut health and stable blood sugar levels.

Ingredients
- 1 ½ cups cooked and cooled pasta (penne or bowtie)
- ½ cup cooked and peeled zucchini, diced
- ½ cup cooked carrots, diced
- ¼ cup finely chopped chives
- 1 cup cooked and diced chicken breast (or tofu for a vegetarian option)
- 2 tbsp extra virgin olive oil
- 1 tbsp lemon juice
- ¼ tsp salt
- ¼ tsp dried oregano or fresh basil
- 2 tbsp grated Parmesan cheese
Method
- Cook pasta, then rinse under cold water and let it cool completely (this increases resistant starch).
- Steam or boil the zucchini and carrots until very soft, then dice.
- Finely chop the chives.
- In a bowl, combine the cooled pasta, cooked vegetables, and chicken (or tofu).
- Drizzle with olive oil and lemon juice, then season with salt and oregano/basil.
- Sprinkle Parmesan cheese on top and mix well.
- Serve room temperature and enjoy a gut-friendly, easily digestible meal!
