Lamb and Spinach Stew

This tasty stew is designed to nourish and replenish during the menstrual phase, providing essential iron,
protein, and anti-inflammatory nutrients. The warming spices add depth while supporting digestion.

Ingredients

1 can (400g) diced tomatoes
2 cups vegetable or chicken broth
4 cups fresh spinach leaves
2 tbsp fresh parsley, chopped
juice of 1/2 lemon
Salt & pepper to taste
500g lamb shoulder, cut into bite size pieces
2 tbsp olive oil
1 onion, finely chopped
3 garlic cloves, minced
2 carrots, diced
2 celery stalks, diced
1 tsp ground cumin
1 tsp ground coriander
1/2 tsp ground cinnamon
1/2 tsp ground turmeric

Method

  1. Heat 1 tablespoon of olive oil in a large pot over medium heat. Season the lamb pieces with
    salt and pepper, then brown them on all sides. Remove and set aside.
  2. In the same pot, add the remaining olive oil and saute the chopped onion, garlic, carrots,
    and celery for 5-7 minutes, until softened.
  3. Stir in the ground cumin, coriander, cinnamon, and turmeric, and cook for 1-2 minutes until
    fragrant.
  4. Return the browned lamb to the pot, then add the diced tomatoes and broth. Bring to a
    simmer, cover, and cook for about 45 minutes, until the lamb is tender.
  5. Stir in the fresh spinach and cook for another 5 minutes, just until wilted. Squeeze in the
    lemon juice and taste the stew, adjusting seasoning with more salt and pepper if needed.
  6. Garnish with fresh parsley and serve warm with whole grain bread, quinoa, or a side of
    steamed vegetables.
