Japanese Inspired Salad

Serve this delicious blend of Japanese flavours in your favourite bowl

Ingredients

1 – 2 cup of sliced lettuce leaves – variety of rocket,cos, Mizuna and coral is ideal, or a kale/cabbage blend.
1 small cucumber – chopped to desired size
1 small carrot – peeled slices using peeler
1/2 red capsicum chopped finely
1/2 firm avocado – sliced into small pieces
1 tablespoon black sesame seeds
1 tablespoon japanese ginger slices
1 nori sheet – torn or cut into thin strips OR 1/2 cupwakami or 2-3 tbsp seaweed salad
2 tbp mung bean sprouts or Edamame beans
Optional meat or marinated tofu

Method

Combine all salad ingredients, ginger and nori/wakami. Sprinkle seeds and drizzle a little mayonnaise in zigzag formation. ENJOY!

About the Author

Nicky Wood is a qualified and experienced Naturopath, Homeopath,
Clinical EFT Practitioner and speaker, with over 30 years of clinical
experience.

Graduated in 1995 on the Gold Coast, Nicky worked in lead facilitation
and Naturopathic roles for the then Camp Eden Health Retreat and
The Cape Retreat, whilst launching her Naturopathic clinic in
Paddington, QLD.

Following invitation to facilitate and operate the opening of the
Mandara Spa’s Magellan Sutera Hotel Spa in Malaysia and the Marriott
Aruba Ocean Club in the Caribbean, Nicky was then selected to lead
the development of global hotel chain, Hyatt International’s Spa
Standards. Nicky led on the opening teams of a number of Hyatt
flagship hotel openings in Japan and Brazil before returning to the
Gold Coast.

Currently Nicky runs a busy private boutique clinic from her Tweed
Heads home, and is a sought after speaker in a number of community
and corporate locations in Australia.

Nicky also offers Telehealth appointments to her international patients
and remote Australian clientele, and mentoring to Naturopathic
practitioners who are seeking solutions to providing five star service and
systems to their own patients.
