High Protein and Fibre Breakfast Bowl

This breakfast is not only high in protein and fiber but also gluten-free, dairy-free, and egg-free, making it suitable for various dietary needs. Plus, it’s quick to prepare and perfect for busy mornings.

Ingredients

  • 2 Tbsps Coconut Yoghurt
  • 100g Chia Pudding (made as per method instructions)
  • 2 Tbsps LSA Mix
  • 1.5 Tbsp Hemp Seeds
  • 1 Tbsp Psyllium Fibre
  • 2 tsps Spirulina
  • 1 Tbsp Pepitas
  • 5 Tbsp (50g) Paleo Granola

Additional options/ swaps according to taste, dietary and texture preferences:

  • 1 Tbsp (16g) Peanut Butter
  • 3 Tsp (12g) Powdered Peanut Butter
  • 1 Tbsp (16g) Almond Butter
  • 2 Tbsp (28g) Hemp Protein

Method

Chia Pudding:

  • Mix 2 tablespoons dry chia seeds in 10 tablespoons liquid (Water/ Plant Mylk).
  • Refrigerate overnight.
  • Chia becomes gelatinous.  Use 2 tablespoons + of this mix

Fruit:

  • Serve with fruits of your choice: berries, banana, fruit salad, fruit compote.
  • Place ingredients of your choice as listed above in a bowl or jar.
  • When ready to eat, simply mix with your spoon and enjoy.

Can be made the night before:

  • Place wet ingredients at one end of your container, layer dry ingredients at other end of your container. (Mixing too early will result in a heavier texture)
  • Keep refrigerated in a sealed container until ready to eat
  • Keeps for 1 day
