High-Fibre Nutritious Pasta Salad
Great for digestion & microbiome health
This recipe is rich in fibre from whole grains, vegetables, and legumes, supporting gut health and stable blood sugar levels.

Ingredients
- 1 ½ cups cooked whole wheat or chickpea pasta
- ½ cup cherry tomatoes, halved
- ½ cup raw spinach, chopped
- ¼ cup canned chickpeas, rinsed and drained
- 1 cup cooked and diced chicken breast (or tofu for a vegetarian option)
- ¼ cup chopped red onion
- 2 tbsp extra virgin olive oil
- 1 tbsp lemon juice
- ¼ tsp salt
- 1 tbsp sunflower seeds (for extra fibre and healthy fats)
- 2 tbsp grated Parmesan cheese
Method
- Cook whole wheat or chickpea pasta and let it cool.
- Chop tomatoes, spinach, and red onion.
- In a bowl, combine the pasta, chickpeas, vegetables, and sunflower seeds.
- Drizzle with olive oil and lemon juice, then season with salt.
- Sprinkle Parmesan cheese on top and mix well.
- Serve chilled for a fibre-packed, gut-nourishing salad!
