Choc Banana Oat Slice
This is a simple, nourishing recipe I come back to often. It’s flexible, forgiving, and made with
whole ingredients that support steady energy and digestion. Like most things in my work, it
doesn’t need to be perfect, just supportive.
Ingredients
3 large ripe bananas
2 cups rolled oats
¾ cup cacao nibs
½ cup almond butter
½–1 grated apple or pear
¼ cup flax seeds
½ cup chopped nuts (walnuts are my favourite)
3–4 tbsp maple syrup
1–3 tbsp coconut sugar (to taste)
1 tsp vanilla essence
½ cup cocoa (more or less to taste)
Optional:
½ cup seeds (sunflower, pepitas – lightly roasted for flavour)
½ cup choc chips
½ cup dried fruit
Method
- Preheat oven to 180°C and line a small tray with baking paper.
- Mash the bananas, then add grated apple/pear, vanilla, maple syrup, almond butter and
coconut sugar. Mix well. - Add the dry ingredients one at a time, finishing with the oats.
- Press evenly into the tray and smooth with the back of a spoon.
- Bake for 20–25 minutes. Allow to cool (it will be soft and moist), then slice into bars and store in the fridge for up to 5 days.
