Berry Coconut Slice

Ingredients

  • ⅔ cup coconut oil, melted and cooled
  • 6 large eggs
  • 1 cup coconut sugar
  • 2 tsp vanilla essence
  • 1 cup almond meal
  • pinch of sea salt
  • 1 tsp baking soda
  • 1 cup shredded coconut
  • ⅓ cup chocolate chips (dairy free)
  • 1 cup frozen mixed berries, roughly chopped

Method

  1. Preheat oven to 180°C.
  2. Line a baking pan with baking paper.
  3. In a bowl, whisk the eggs, then add in the cooled coconut oil, coconut sugar and vanilla and mix together.
  4. Add the almond meal, salt and baking soda to the wet ingredients and stir until combined.
  5. Add the coconut, chocolate chips and frozen mixed berries and stir through.
  6. Pour the batter into the prepared baking tin.
  7. Cook for 30-35 min (less if you like it more fudgy, more if you like it cakier)
  8. Wait until cooled before cutting and serving with some coconut yogurt or coconut cream.

  • Low Hydrogen Sulphide Diet – sub eggs with ‘flaxseed’ eggs (1 egg = 1 tbsp ground flaxseed to 3 tbsp water, mix and lay to rest for 5-10min).
