Beetroot and Quinoa Salad with Feta and Walnuts
This Beetroot and Quinoa Salad provides nourishing support during the menstrual phase, with iron-rich
beetroot for energy, walnuts for healthy fats, plus feta and quinoa for protein. The bright lemon and honey in the dressing offer a refreshing, seasonal touch.
Ingredients
2 medium beetroots, diced
1 cup quinoa, rinsed
1/2 cup feta cheese, crumbled
1/3 cup walnuts, toasted and roughly chopped
2 cups baby spinach
2 tbsp fresh parsley, chopped
1 tbsp olive oil
1 tbsp lemon juice
1 tsp honey or maple syrup, (optional)
Salt & pepper to taste
Extra lemon wedges for serving
Method
- Preheat oven to 200C (390F). Wrap the beetroots in foil and roast for 45-60 minutes, or
until tender. Let them cool, then peel and dice into bite-sized pieces. - While the beetroots are roasting, bring 2 cups of water to a boil and add the rinsed quinoa.
Reduce heat, cover, and simmer for 15 minutes, or until the water is absorbed. Fluff with a
fork and set aside to cool. - In a small bowl, whisk together the olive oil, lemon juice, honey or maple syrup, salt and
pepper. - In a large bowl, toss the cooked quinoa, roasted beetroots, baby spinach and walnuts with
the dressing. Gently fold in the crumbled feta cheese. - Garnish with fresh parsley and serve with extra lemon wedges for an added zesty flavour.
