Ingredients

• 1 tabs plus 1 teas coconut oil, divided

• 1 medium onion, diced

• 1 garlic clove, chopped

• 1 celery stalk, chopped

• 2 cups coconut milk

• 1 tabs and 2 tsp arrowroot powder

• 3 medium zucchini, ends trimmed, spiralized (or sliced into long thin strips)

• 2 cans (140g) tuna, drained

• 3/4 teas sea salt

• 1 tabs chopped fresh parsley

Method

1. Preheat oven to 180oC and lightly grease a casserole dish with 1 teas of coconut oil. Set aside.

2. In a skillet over medium heat, heat the remaining 1 tabs of coconut oil.

3. Add the onion, garlic and celery and saute for 5-6 minutes or until the onion is translucent and the celery is slightly soft. Remove from the heat.

4. In a medium bowl, whisk the coconut milk with the arrowroot until the mixture thickens.

5. In the prepared casserole dish, combine the cooked vegetables, zucchini noodles, tuna, coconut milk mixture and salt. Stir until well combined.

6. Bake for 20—30 minutes or until the zucchini softens. Top with parsley and serve.
