Raw Vegan Raspberry Slice
Ingredients
Chocolate Base
- ½ cup almond meal
- 1 cup desiccated coconut
- 1 tbsp cacao powder
- 3 tbsp maple syrup
- 1 tbsp peanut butter
- ½ tsp vanilla extract
- Salt
Raspberry Filling
- 1 ½ macadamias
- ¾ cup raspberries
- 2 tbsp maple syrup
- 2 tbsp coconut oil
- ½ tsp vanilla extract
- Juice of 1 lemon
Chocolate Topping
- ¾ cup cacao
- ½ cup coconut oil
- ½ cup maple syrup
Method
- Line a tart tray
- Place all base ingredients into a food processor, blend until mixture resembles a sticky crumb
- Compact mix down into tin, smoothen surface, freeze
- Place all filling ingredients into a food processor, blend until combined
- Pour onto of base + place back in freezer
- Place all topping ingredients into a food processor, blend until combined
- Pour over the top + smoothen out
