Brought to you by Polly Wilkie
from Care Clinic in Bondi Junction

My favourite foods are nutritious, easy to prepare, and delicious.

Coconut Yocream is free from Gluten, Dairy, eggs and Soy.

Ingredients

  • 1 cup coconut yoghurt (Plain)
  • 1 cup coconut milk
  • 1 can coconut condensed milk (320g)
  • 1 teaspoon vanilla bean paste
  • Pinch of sea salt

Method

  1. Combine all ingredients in mixing bowl.
  2. Whisk until smooth and fully blended.
  3. Pour into ice cream maker and follow machine settings (I used “The Original Greenpan Frost ice cream maker”) or scrape into a freezer safe container and place in freezer for minimum 2 hours, until softly frozen.
  • Best served immediately as the soft smooth texture melts quickly.
  • Store in freezer for up to 3 weeks.
  • Add your favourite berries to the mix or substitute fruit flavoured coconut yoghurt.
