Buckwheat & Mushroom Gołąbki (Gut-Friendly Polish Stuffed Cabbage)
A nourishing twist on a traditional Polish dish, this version replaces rice with buckwheat and adds mushrooms for extra gut and immune support.
Ingredients
- 1 large cabbage
- 1 cup buckwheat (uncooked)
- 250g mushrooms (finely chopped)
- 1 onion (chopped)
- 2 cloves garlic (minced)
- 1 tbsp olive oil
- 1 tsp dried marjoram
- Salt and pepper to taste
- 500ml passata (tomato sauce)
Method
- Cook buckwheat according to package instructions.
- Sauté onion, garlic, and mushrooms in olive oil until soft.
- Mix with cooked buckwheat, herbs, salt, and pepper.
- Blanch cabbage leaves and fill each with the mixture.
- Roll into parcels and place in a baking dish.
- Pour over passata and bake at 180°C for ~40 minutes.
