Asian Slaw Salad

Serves 4

Ingredients

1 whole roasted free range chicken (Can buy a ready made hot chicken or make your own)

1/4 cabbage chopped

1/4 red cabbage chopped

1 bunch of coriander finely chopped

1/2 cucumber (grated)

1 large carrot (grated)

1 pack 200-300g rice noodles (vermicelli)

Chopped dry roasted (unsalted) cashews to serve

Dressing 

1/4 cup apple cider vinegar

1/4 cup olive oil

1/4 cup tamari

2 tbsp sesame oil

1 clove garlic chopped

1.5 tbsp honey

Method

  1. Place rice noodles in boiling water to cook
  2. Mix together dressing in a jar and shake
  3. Chop / grate up carrot, cucumber, cabbages and coriander and mix in a large bowl
  4. Drain noodles and stir through, add dressing.
  5. Top with shredded chicken and serve with chopped cashews
