2 bunches Broccolini
2 bunches Asparagus
2 bunches Bok Choy (or Pak Choy)
200g snow peas
1 small knob fresh ginger
100ml soy sauce
Chop the vegetables into bite size pieces and peel the ginger and cut finely into small pieces. Stir fry the ginger in 2 Tablespoons of Olive Oil for 1-2 minutes and then add the harder vegetables such as the Broccolini and Asparagus. Stir fry these for another 3-4 minutes and then add the snow peas and Bok Choy and the soy sauce. Stir fry for 2 -3 more minutes and then remove from heat and serve.
