Shakshuka

This Shakshuka dish has North African and Middle Eastern origins.

Serves 2

Ingredients

4 eggs

2 cups fresh tomato – diced

1 tablespoons olive oil

½ brown onion

1 garlic clove

100g mushroom – sliced

½ red capsicum – de-seeded and diced

1 red chilli – deseeded and sliced

Pepper to taste

2 fresh coriander sprigs to garnish – roughly chopped

Method

Heat oil in a pan and add onion, garlic, chilli, mushroom and capsicum. Cook stirring often. Add pepper to taste

Add the tomatoes, bring mixture to the boil. Cook for 5 minutes. Make 4 indents in the mixture and break an egg into each. Cook for 15 minutes or until egg whites are cooked.

Top with coriander and serve
